Home-made Ricotta Cheese

For a really quick way to make ricotta, put a 1 litre carton of milk in a saucepan and add either 1/2 a large carton of plain yogurt or 2 small pots of yoghurt and some salt. Bring the pan steadily up to the boil and it will start to separate. Skim off the clear liquid whey. The resultant curd is your ricotta. Press into a suitable mould or container and chill. Looks impressive turned out of a mould and drizzled with honey. You can serve this warm too.
