Parmesan Crisps by Lin

Grated parmesan. Oven tray or similar. Baking Sheet. Place about inch and half round small piles parmesan on the sheet leaving room for each to melt. Bit of ground pepper on each. (Oven 160-180 by the way). Pop them in and keep watch – they will melt into little ‘crisps’ very soon. Leave to cool a little before peeling off with knife to flat surface and allow to cool down further – they will harden. Great with a glass and you don’t need/eat to many. A little sophisticated snack. I have also put basil into the parmesan to melt.
