Sun-dried Tomato Pesto

25g pine nuts (lightly roasted or fried, do not cheat on this)
25g Parmesan cheese
50g sun-dried tomatoes (use the ones that are already oil)
1 clove garlic
60ml (4 tbsp) olive oil

Stick it in a food processor. It is to die for. Use the pesto on crackers with Philly cheese or onto thin pasta or on crusty bread…
